You can also contact the shop to place an order and receive it anywhere in France. Every wheel comes from our Roquefort cheese dairy, at the foot of the Combalou in Roquefort-sur-Soulzon.

Beneath the Maison Carles shop, three levels of natural caves sink into the rock of Combalou. For nearly a century, it is here that time does its work. Two levels are devoted to the ageing of our Roqueforts. The third is reserved for cultivating our Penicillium roqueforti on bread, following the traditional method carried on by Maison Carles. Naturally ventilated by the fleurines, the fissures that run through the mountain, the caves offer a coolness and humidity that stay remarkably stable throughout the year. On the oak travées, the Roqueforts age slowly, until they reveal the full richness of their aromas and character.

Delphine and the team open the doors to interested visitors, professionals, and the press. Visits are arranged, not improvised. A word, a call, and we agree on a time.
