The Maison Carles shop sits at the heart of Roquefort-sur-Soulzon, just below our four levels of caves. There you will find the different expressions of Roquefort Carles, tasting advice, and a selection of gourmet Aveyron products: charcuterie, jams, craft beers, wines… Come and discover our many pairings.

Our traditional house Roquefort, the most authentic. Unctuous paste, tight blue veining, long ageing on oak travée. Whole wheels, half-wheels, and vacuum-sealed slices.

A more accessible reading of the Maison. Paste slightly less pronounced, perfect for discovering the Carles universe or composing a shared platter. Whole wheels and slices.

Chapter III · The caves of Combalou

Behind the shop, a staircase descends towards the fissured rock of Combalou. The fleurines, the natural faults that temper the cave, blow the same fresh air they did in 1927.
Delphine and the team open the doors to interested visitors, professionals, and the press. Visits are arranged, not improvised. A word, a call, and we agree on a time.
